Sponge Cake Recipe

This simple sponge cake recipe is very easy to make and is a perfect base for many other recipes. Now let’s get started and make this wonderful sponge cake. If I can do it, you can do it too. Let’s start baking!

In order to make this simple sponge cake, you need the following ingredients:

  • 2 eggs (60–65 g per egg, including shell): separate the whites and yolks
  • 60 g all-purpose flour
  • 60 g powdered sugar (or granulated sugar)
  • 10 ml fresh milk
  • 10 ml cooking oil
  • 1/4 teaspoon baking powder
  • Vanilla
  • A pinch of salt 

How to make Sponge Cake


1/Use a mixer to beat the egg whites until foamy. Gradually add the sugar and continue beating until stiff peaks form.

2/ Add the egg yolks and beat together at medium speed for another 1–2 minutes, then stop.

3/ Sift the all-purpose flour and baking powder together. Gently fold the flour mixture into the egg mixture using a spatula, mixing in one direction and from the bottom up to prevent the flour from settling at the bottom of the bowl. Work quickly but gently; if too many bubbles form, the cake may turn dense after baking.

4/ Add the cooking oil, fresh milk, and vanilla last. Continue folding gently and quickly until the liquid ingredients are fully combined with the batter and no liquid remains at the bottom of the bowl.

5/ Pour the batter into a lined cake pan and place it in a preheated oven (preheat for 10 minutes).

  • Bake at 160°C (320°F) for about 15 minutes.

  • Use bottom heat first, then switch to top heat for the last 5 minutes.

    (Alternatively, insert a toothpick into the center of the cake; if it comes out clean, the cake is done.)

Once baked, remove the cake from the oven and carefully release it from the pan. Place the cake on a rack to cool completely. Do not leave the cake in the oven or the pan for too long, as this may cause it to shrink and collapse.
