  • 200g peeled mung beans
  • 30g glutinous rice flour
  • 150g white sugar
  • 50g malt
  • 50g cooking oil

  • 300g flour
  • 15g peanut butter
  • 5g honey
  • 40g vegetable oil
  • 1-2 egg yolks
  • 210g baking syrup

Cake glaze mixture

  • 1 egg yolk
  • 1/2 teaspoon of baking syrup
  • Fresh milk
  • Oil

How to make mung bean filling for mooncakes

Soak the mung beans in water for about 4 hours until they soften, then rinse them thoroughly. Next, put the beans in a pot with a little water and cook until tender.

After the beans are cooked, pour them into a blender and blend until smooth. Then, pour the blended beans and sugar into a non-stick pan and cook over medium heat. 

Note: Stir continuously to prevent the beans from burning and clumping.

Dissolve the glutinous rice flour in cooking oil, then add it to the simmering mung bean filling and mix well. Wait until the filling becomes slightly sticky, then add the malt syrup and simmer for a few minutes. If you can easily form the mixture into balls with your hands, turn off the heat.

Sift the flour once, then take the bowl of egg yolk mixture out, pour in the flour and mix until all the ingredients are dissolved.

Add the remaining sugar syrup to the flour bowl, knead the dough, and cover tightly. Let the mixture rest for 30 minutes. After resting, divide the dough into equal portions weighing 50g each.

Roll out the dough for the pastry shell thinly, place the mung bean filling in the center, and wrap it up so that the filling is completely enclosed.

Take out the mooncake mold, brush a layer of cooking oil into the mold, place the dough in, and press firmly to create a sharp, attractive shape. Continue this process until all the prepared ingredients are used up.


How to bake mooncakes

Arrange the cookies on a baking tray and bake in the oven at 180°C. Wait about 10 minutes, then remove the cookies and spray them with water.

Combine all the glaze ingredients in a bowl, stir well, and brush onto the bread. Then bake for another 10 minutes.
