Ingredients

- 6 large eggs, or 8 small eggs (3 eggs with both yolk and white intact, 3 eggs with only yolk. If using 8 eggs, use 4 whole eggs and 4 eggs with only yolk)
- 500 ml unsweetened whole milk
- 200 g condensed milk
- 100 ml whipping cream (this ingredient makes the caramel rich and creamy)
- Vanilla
- Ingredients for making caramel: 150 g white granulated sugar, 1/2 lemon
How to make Flan
- Gently mix the eggs with a fork. Do not beat too hard.
Heat 500 ml milk + 200 g condensed milk + 100 ml whipping cream until warm. Do not boil.
Slowly pour the warm milk into the eggs, stirring gently. Add vanilla.
Strain the mixture twice.
Caramel:
- Cook 150 g sugar + 40 ml water over medium-low heat without stirring until golden.
- Add ½ lemon juice, swirl the pan, then add 3 tbsp water. Remove from heat.
- Pour caramel into molds and let cool slightly.
Cooking:
- Pour egg mixture into molds. Pop bubbles if needed.
- Steam on low heat for 30–35 min, or bake in a water bath at 150–160°C for 30 min.
- Cool, refrigerate 3 hours, then unmold and serve.
