Flan Recipe

This method will give you a rich, smooth, and very fragrant caramel flan, a favorite snack for many people, especially children.

Ingredients



  • 6 large eggs, or 8 small eggs (3 eggs with both yolk and white intact, 3 eggs with only yolk. If using 8 eggs, use 4 whole eggs and 4 eggs with only yolk)
  • 500 ml unsweetened whole milk
  • 200 g condensed milk
  • 100 ml whipping cream (this ingredient makes the caramel rich and creamy)
  • Vanilla
  • Ingredients for making caramel: 150 g white granulated sugar, 1/2 lemon

How to make Flan


  • Gently mix the eggs with a fork. Do not beat too hard.
  • Heat 500 ml milk + 200 g condensed milk + 100 ml whipping cream until warm. Do not boil.

  • Slowly pour the warm milk into the eggs, stirring gently. Add vanilla.

  • Strain the mixture twice.

Caramel:

  •  Cook 150 g sugar + 40 ml water over medium-low heat without stirring until golden.
  • Add ½ lemon juice, swirl the pan, then add 3 tbsp water. Remove from heat.
  • Pour caramel into molds and let cool slightly.

Cooking:

  • Pour egg mixture into molds. Pop bubbles if needed.
  • Steam on low heat for 30–35 min, or bake in a water bath at 150–160°C for 30 min.
  • Cool, refrigerate 3 hours, then unmold and serve.
